A deliciously simple skillet perfect for the fall season!!
1-1.25lb lean ground beef , 1-1 1/2 large zucchini, 1/2-1 green pepper, 1 large sweet potato, and 1 cup of green peas (I used frozen)
Spices/seasoning: garlic powder, onion powder, dried oregano, black pepper, sea salt, cinnamon, and corriander (all to taste but I did only a pinch of salt)
Preheat oven to 400F and while oven is heating, chop sweet potato into small cube like pieces then lightly spray with olive oil and sprinkle some cinnamon (optional). Let bake in oven for 30 mins, flipping at half way point.
In a large skillet pan, add a little olive oil, cook ground beef, and add all seasonings/spices lightly (except corriander). While the meat is cooking, slice up zucchini and then cut into quarters, chop peppers into small pieces, cup of peas, and add all ingredients to skillet. Saute mixture together until veggies are tender. Add a littile more of each seasoning including corriander (go light with the corriander, as a little goes a long way in my opinion).
Remove sweet potato from oven and add to skillet and mix together. Voila! Dinner is served!
